A word from the winegrower Brissot François
Merlot is the king grape variety of the Saint-Emilion region. Cultivated reasonably (control of yields) and harvested at optimal maturity, it is fully expressed on our clay-limestone hills. It brings a lot of fruity and a flexible and silky tannic structure to our vintage, giving pleasant wines on their (fruity) youth and having an interesting childcare potential of ten years. We vinify it in a traditional way in thermoregulated cement tanks, bringing it if necessary the tools of modern oenology (cold pre-fermentation maceration, load shedding, bleeding, selection of yeasts). The 12 -month breeding in oak barrels stabilizes color and structure and develops in parallel with the fruity aromas of vanilla and toasted notes. We have chosen to make the Château de l'Annocre, a vintage based on gourmet, accessible and real pleasure, accompanying traditional or modern cuisine.
